Thalia Pericles is the former founder, president, and executive pastry chef of the award-winning business Cakes by Thalia LLC. With over 17 years’ experience, Thalia has held several notable positions including working at the legendary restaurant La Caravelle with renowned pastry chef, Laurent Richard, Provence en Boite, and at The Ritz Carlton Hotel in Battery Park New York City. She also spent several months working at Le Viscos-a 3-star hotel and restaurant in the Haute Pyrenees in Southwest France.

Thalia garnered several culinary prizes including the American Cancer Society’s Best Birthday cake (Brooklyn Competition) and was politely asked not to compete in the Cupcake Wars NYC after winning for two consecutive years. She was instead invited to judge the competition. Other notable acknowledgments come from the Salon of Culinary, Arts Union Square Restaurant Group, and the renowned The Société Culinaire Philanthropique. She is currently an active member of the Philanthropique.

She shares her passion through teaching at Monroe College and her alma mater NYC College of Technology.
